White Mirepoix replaces the traditional carrots with parsnips, and occasionally includes Mushroom trimmings. This recipe can be used for stocks or white sauces.

  • 4 ounces Onions, chopped
  • 4 ounces White portion of leeks, trimmed and chopped
  • 4 ounces Celery chopped
  • 4 ounces Parsnips chopped
Heat in a medium high pan with a small amount of fat. The size of the chop should depend on how long your recipe is designed to cook.
