Mirepoix is the French word for a combination of onion, celery and carrot (the holy trinity). This vegetable mix is the base for countless recipes including soups, stews, sauces, stocks etc… It’s a perfect start for most recipes as the onion, celery and carrots lend their traditional flavors in a balanced way. The onions, carrots and celery are usually finely diced and either roasted or sautéed in butter. Traditionally, the ratio for a mirepoix is 2:1:1 (2 onion, 1 celery and 1 carrot). Sometimes carrots is replaced by parsnips, but then it’s called white stock, or fond blanc. Occasionally cubes of ham or bacon is added to give a richer flavor. A mirepoix gives your dish a first layer of flavor, on which you can continues to build additional dimensions. The combination of onions, celery and carrots works in almost any dish and is a great base.
