There are several cutting methods one can use to cut onions and vegetables. Mincing is the method that produces a relatively even, very fine cut. Mincing is appropriate for garlic, shallots as well as herbs and other flavoring ingredients. To mince a garlic clove, start with roughly chopping it. Gather all the garlic pieces in a pile on the cutting board. Keeping the tip of the blade against the cutting board, lower the knife firmly and cut through the garlic rapidly. Continue to chop until the garlic is cut as fine as you like.
