| | Leeks are sleek, green and relatively mild. The leek is related to the onion and the garlic. Instead of forming a tight bulb like the onion, the leek produces a long cylinder of bundled leaf sheaths. The bottom of the leek naturally grow white and the end of the leek is darker. The white parts are generally milder and not as tough as the darker parts which are better left untouched.
Leeks can be eaten raw, however they turn milder and their flavor is enhanced when cooked. Leeks are excellent when braised with butter and wine. They are also a nice addition in soups, stews and sauces and can be used instead or in addition to regular onions. When using onions, you want to make sure to separate them and clean them, as small particles of sand or dirt can get stuck in between the layers. A serving size is about 1/2 cup raw.
