Brown sugar gets its distinctive brown color from molasses. Refined white sugar is enhanced with a varying amount of molasses, depending whether the end-result is light brown sugar (around 3.5% molasses) or dark brown sugar (around 6.5% molasses).
Brown sugar has a quite high presence of water compared to white sugar. Due to this fact, brown sugar contains slightly less calories by weight, however brown sugar packs more densely than white sugar and therefore contains more calories when measured by volume.
