If you are at a loss when it comes to thinking of some easy to make, substantial dishes for dinner, then this method might be worth considering. The idea of serving pizza and soup together is perfect if you want to incorporate different vegetables and foods into your everyday meals, however you're not sure how to go about it. Pizza has a bad reputation as being very unhealthy, however if you make the pizza from scratch and think of it as a freshly made sandwich where you don't put a ton of cheese on, then it becomes a whole different dish.
Pizza is really nothing more than a sandwich, and if you make a batch of whole wheat pizza dough and keep it in the fridge (it should last for about a week), then you're ready for this meal anytime. Use this dough as a canvas to put on different ingredients and cheeses (if you serve this as an everyday meal, don't go too heavy on the cheese, instead put lots of different ingredients on the pizza and see the cheese as just one of several toppings). This is a great way to use leftovers (cooked vegetables, a piece of leftover meat or chicken, a piece of blue cheese for example). You don't always have to have tomato sauce on pizza, instead try it without it at times, or make a quick on with canned tomatoes and keep on hand in the fridge.
To go with the pizza, make a simple soup utilizing vegetables and / or legumes and your family will get a balanced and complete meal. It's also a good idea to double or triple the soup and freeze the rest, then next time you're at loss for what to make, then simply reheat.
Sample Menue: 1. French pizza with caramelized onions, anchovies and black olives Cream of broccoli and kale soup
2. Pesto, shrimp and red pepper pizza Onion & Garbanzo bean soup
3. Pizza with mozzarella cheese, salami and fresh tomato slices Ginger carrot soup
4. Pizza with blue cheese, chicken and fresh mushrooms Cauliflower, garlic and almond soup ------------- The point is to match simple, yet elegant pizza combinations with flavorful soups that generally contain fresh vegetables. This would also be a nice idea for a dinner party: make a couple of different pizza combinations and a nice soup to go with it - it's easy, delicious and crowd pleasing.
