More Rhubarb Ideas (Soup, Salad, Sorbet, Granita, Salsa, Curd...)

We love rhubarb around here, so why not add some more ideas to the list of possiblities of what to do with this interesting fruit.rhubarb

- To start with: of course rhubarb crumble, rhubarb coffee cake, rhubarb fool

- Chilled rhubarb soup (pureed, smooth, possibly with a touch of mint)
     - sweet with melon for dessert
     - savory with cucumber and yogurt/feta/goat cheese drizzle/topping

- Rhubarb sorbet

- Rhubarb granita

- Rhubarb salsa
    - utilizing the rhubarb raw like the tomato or onion (sour, tart, fresh). Mix with grilled habanero / tomatillo peppers, add garlic, cilantro, tomato

- Rhubarb chutney
   - cook the rhubarb in chunks for a couple of minutes with raisins, cinnamon sticks, ginger, onion, sugar, lemon

- Pickled rhubarb
    - longer stalk pieces or coins of rhubarb, uncooked, pickled with ginger, chili pepper

- White pizza with rhubarb drizzle
    - pizza without tomato sauce, with mozzarella cheese and Italian meats. Once it comes out of the oven, drizzle with a tart, fresh rhubarb sauce (raw/ slightly cooked rhubarb, touch of sugar, lemon, mint)

- Alternative vanilla pastry filled sweat wheat buns
   - when making the vanilla cream, add cooked (pureed, or slightly chunky) sweeteed rhubarb. Fill buns with rhubarb vanilla pastry cream

- Rhubarb curd  
   - variation on lemon curd: make rhubarb curd and fill pound cakes, angel food cakes, top with whipped cream and strawberries

- Rhubarb meringue pie
  - replace lemon curd in lemon meringue pie for rhubarb curd. You can also do the same with lemon tarts - make rhubarb tarts
