Powdered sugar, also known as confectioner's sugar and icing sugar is a finely ground type of sugar. Cornstarch (or sometimes wheat flour, calcium phosphate, or potato flour) is usually added to stop the sugar from caking or clumping.
Powdered sugar is usually used when dusting cakes as well as when making icing and frosting. 10x powdered sugar is the same thing, it's simply ground finer.
When dusting powdered sugar on a cake, it is usually a good idea to use a tea strainer or a very fine colander to hold the sugar while you dust it. Conversion Needed 1 cup confectioners' sugar Substitute 1 cup granulated sugar + 1 teaspoon cornstarch, ground in a blender (not a food processor) Works well for dusting over cakes, less so in frostings and glazes. 1 cup confectioners' sugar is 4 ounces.
