While regular biscuits can be wonderful on their own, sometimes it can be fun to mix it up a bit and make it more interesting. These stuffed biscuits (or scones) are full of crispy bacon, flavorful cheese and green spinach, and they are absolutely delicious. You could either serve these plain as a meal (they would be perfect to bring out for a picnic), or next to a bowl of soup. Of course you could vary the additions in these biscuits, simply use what you have on hand: some ham would be wonderful, of course all kinds of cheeses would do. Some cooked onion or mushrooms would work as well as some fresh herbs; there are just so many options to choose between! No matter what you choose, the idea of stuffing biscuits with flavorful additions is a good one, since you really get a whole little complete meal in one small size. 6 large biscuits Ingredients: - 2 cups flour
- 4 teaspoons baking powder
- 3/4 teaspoon salt
- 4 tablespoons butter, chilled
- 1 cup milk, chilled
Additions: - 1 pound of bacon, cooked crispy, and cut in bits
- 1 pack of frozen spinach, thawed and patted dry
- a good chunk of flavorful cheese, chopped in smaller cubes (aged cheddar works well)
Method:
Preheat the oven to 450 degrees F. Start with mixing all the dried ingredients together in a bowl. Cut the chilled butter up in small pieces and place in the bowl. With your fingertips, quickly work the dough together, it’s alright if some small pieces of butter still remains. Add the bacon, spinach and cheese into flour mixture and distribute well. Add the milk and stir the dough together with wooden spoon, it will be quite sticky. Try not to overdo it. Take the dough out on floured surface and turn it over itself a couple of times. Roll it out about an 1 inch thick and cut pieces out with a round 3-inch cutter (if you don’t have one, simply use the top of a floured coffee cup). Use all the dough and place the pieces on a baking sheet. Bake in the oven for about 12 minutes until they are nice and golden.
