Seperate 5 egg whites from the yolks and place in a stand mixer with a little bit of the sugar. Whip on high for a minute and then slowly add more sugar until the full 1/2 cup is fully mixed. Continue to whip until light and fluffy. The more sugar you add beyond 1/2 a cup the harder they will become when cooked. Pre-heat the oven to 200° F Using a spoon make 24 equal meringues and place on a baking sheet lined with parchment paper or a silpat and bake for 3 hours.
