Quick 5 Minute Jello with Cool Whip

Jello can be a great dessert to make, but often you don't think ahead, and jello does need to set up for a couple of hours if you do it the traditional way. So what do you do if the craving for jello strikes and it's not already sitting in the fridge setting up? Well, you do a quick jello in the food processor / blender and then you let it set up for five minutes. The result is excellent, quick and delicious.

We used cool whip here, however you can probably use yogurt, sour cream, or some heavy cream instead to add some creaminess. Now this method opens up so many doors – suddenly jello becomes quick and easy to do. The consistency after it has set in the fridge resembles parfait almost, it's very light and very good.

4 servings

  • 1 small package of jello (we used cherry flavored)
  • 2/3 cup boiling water
  • 1 ½ cup of ice cubes
  • ½ pack of cool whip (the small container)

Method:

Place the contents of the jello pack in either a food processor or a blender. Pour over the hot water and put the machine on. Let it run for about 2 minutes. Now start adding the ice cubes, one ice cube at a time and run until they have been crushed and incorporated into the jello. At this point you could also add some fruit (frozen would work great) to the jello mix – think strawberries, raspberries or blueberries etc...

Now, add half the container of cool whip in the machine and run for a little while longer until everything is incorporated.

Pour the contents into a bowl, cover with plastic wrap and let set in the fridge for 5 minutes. Serve with some additional cool whip or whipped cream.
