A nice quiche can be served either for breakfast, brunch, lunch or dinner, it's such a versatile dish. This walnut, feta and spinach quiche is quite delicious and features a good balance of flavor and texture. Of course this quiche could be varied endlessly: other nice additions or substitutions for the quiche would be black olives, blue cheese, different types of greens, tomatoes, peppers etc... Method: See instructions for making the pie dough... Blind bake the pie dough in a 400 degree oven for about 15 minutes. Whisk together the eggs and half-and-half. Add some salt and pepper. Make sure the spinach is well thawed, squeeze out any water. Chop up the walnuts roughly and cut up the cheese. Assemble the pie: Distribute the spinach, walnuts and feta on the dough. Pour over the egg batter. Bake in a 350 degree F for about 30-40 min. Let the quiche sit for at least 15 minutes to settle before cutting into it.
