| This recipe is adapted from an old Southern Living cookbook.We really liked how this came out. The texture and flavor were great and the fall spices are perfect for this time of year. It would be nice to have this for a Thanksgiving dessert. - 2/3 cup shortening
- 2 cups sugar
- 4 eggs
- 2 cups cooked, mashed pumpkin
- 2/3 cup water
- 3 1/3 cups all-purpose flour
- 2 teaspoons baking soda
- 3/4 teaspoon salt
- 1/2 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1 teaspoon ground cloves
- 2/3 cup pecans or walnuts, chopped
- 2/3 cup raisins
Method
Cream Shortening; gradually add sugar, beating well at medium speed of electic mixer. Add eggs, one at a time, beating after each addition. Stir in pumpkin & water. Combine flour & next 5 ingredients; add to creamed mixture, mixing well. Fold in walnuts & raisins. Spoon into 2 greased & floured 9x5x3 inch loaf pans, bake at 350 for 1 hour. Cool in pans 10 minutes & transfer to wire rack. 2 loaves
