To make your own ice cream sandwiches is really easy and would be a fun project for a rainy afternoon. Everybody loves ice cream sandwiches, how can you not? Here we have made simple chocolate chip cookies and filled them with chocolate ice cream. The important thing to remember when making ice cream sandwiches, is to let the cookies cool completely before assembling them.
Of course you make any types of cookies you prefer, however it's easier if they are pretty thin. Then you have the ice cream: here you could also experiment with different flavors and combinations. Either make your own ice cream or buy pre made.
Ice cream sandwiches are great to make if you're having a dinner or a grill party: they have to be assembled beforehand, and then you simply take them out when you're ready to serve them. You can also make more sophisticated versions with different kinds of cookies and ice creams, if you would prefer to make a nice selection. Ingredients:
1 batch of chocolate chip cookies
Ice cream
Method:
Bake the cookies and let them cool completely before assembling. Take the ice cream out and let it soften a bit. Then take a cookie, spread a generous amount of ice cream on top of it, then top with another cookie. Either place all the assembled cookies on a sheet pan and cover with plastic wrap, or wrap each one individually in plastic wrap. Put back in the freezer for at least an hour or two until the ice cream has frozen back to shape again.
