 Chicken Salad is very easy to make and it is great use of leftovers.

Method

In the bowl of your food processor place the cooked chicken breasts and pulse until you get a rough chop. Then add the mayonnaise, pickles, salt and pepper, pulse until it is the consistency you like. Serve on bread for a sandwich or on crackers for an affordable appetizer.
