A quick, tasty and easy loaf anytime that freezes well for unexpected guests. Ingredients - 1/2 cup sugar
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 cup cornstarch
- 1/2 cup butter, softened
- 2 eggs, beaten
- 1 teaspoon vanilla extract
- 2 tablespoons raisins
- 1/2 lemon zested & 1/4 cup walnuts chopped
- 3 tablespoons chocolate chips
- confectionery sugar for dusting
Method Preheat oven to 350 degrees. Grease, butter or spray a 8 1/2 x 4 1/2 inch loaf pan. Layer 1 1/2 tablespoon over bottom on pan and shake.
Sift flour, baking powder and cornstarch in a mixing bowl twice.
In electric mixer, cream butter and add sugar until light and fluffy, adding eggs one at a time.
Fold dry ingredients into butter mixture in thirds. Gently add vanilla extract, raisins, walnuts, lemon zest and chocolate chips.
Pour mixture into loaf pan and bake 45-50 minutes. Cool on wire rack and dust with sugar.
