Easy Chocolate Chip Walnut Loaf

A quick, tasty and easy loaf anytime that freezes well for unexpected guests.

Ingredients

  1. 1/2 cup sugar
  2. 1 cup all-purpose flour
  3. 1 teaspoon baking powder
  4. 1/4 cup cornstarch
  5. 1/2 cup butter, softened
  6. 2 eggs, beaten
  7. 1 teaspoon vanilla extract
  8. 2 tablespoons raisins
  9. 1/2 lemon zested & 1/4 cup walnuts chopped
  10. 3 tablespoons chocolate chips
  11. confectionery sugar for dusting

Method

Preheat oven to 350 degrees. Grease, butter or spray a 8 1/2 x 4 1/2 inch loaf pan. Layer 1 1/2 tablespoon over bottom on pan and shake.

Sift flour, baking powder and cornstarch in a mixing bowl twice.

In electric mixer, cream butter and add sugar until light and fluffy, adding eggs one at a time.

Fold dry ingredients into butter mixture in thirds. Gently add vanilla extract, raisins, walnuts, lemon zest and chocolate chips.

Pour mixture into loaf pan and bake 45-50 minutes. Cool on wire rack and dust with sugar.
