Sun-Dried Tomato Cream Cheese Herb Spread on Toasted Baguette

Sometimes you wish you had a tasty appetizer on hand. Maybe you have a few guests over, you're waiting for dinner tosun_dried_tomato_appetizer cook, a drink in your hand but nothing to nibble on. Well, when I find myself in that scenario I go back to cream cheese and flavorings because it's easy, it's done in no-time and it usually turns out delicious!

This time I chose sun dried tomatoes, garlic, basil and some chopped celery for crunch mixed with simple cream cheese on some bread. The combination was excellent and these nibbles were gone in no time! It can't really get much easier than this.

Appetizer for 4 people

  • ½ cup of cream cheese
  • 2 tablespoons of chopped sun dried tomatoes in oil
  • 1 garlic clove, pressed
  • 2 tablespoons of fresh basil, chopped
  • ½ celery stalk, chopped finely
  • the juice of half a lemon
  • salt, pepper

Mix all the ingredients together and taste with salt and pepper. Slice half a baguette in very thin pieces, apply some olive oil and broil for a few minutes until crispy. Apply a generous amount of the cream cheese spread on each slice. Serve immediately.
