Saffron is the world's most expensive spice by weight, having a strong perfumed aroma with a pungent, bitter metallic-honey taste which is used for cooking as a seasoning and coloring agent. With the intense flavor and dying properties use sparingly in cooked and baked dishes. The stigma, threads, strands or strings = 2 teaspoons whole, 1 teaspoon crumbled, 1/2 teaspoon powdered = 1 gram. Saffron is used for coloring in rices, risotto, fish, paella, saffron buns, yeast cakes and flour.
