This dish is relatively high in cost as well as in calories. A couple of ingredients bring the cost up such as a large amount of extra virgin olive oil, Parmigiano-Reggiano cheese, ground veal and button mushrooms. The largest calorie contributor is the pasta, the olive oil, the breadcrumbs and the ground veal.

To reduce the cost of this meal, use a lesser quality olive oil, a cheaper hard-rind cheese and perhaps ground pork or beef as a substitute for the ground veal.

1 large egg yolk
1/2 cup breadcrumbs
1 small garlic clove, finely chopped

1 1/2 cups fresh sweet peas or thawed tiny frozen peas
1/2 cup vegetable stock or broth
6 mint leaves
1 1/2 pounds pasta alla chitarra or tagliolini
4 tablespoons unsalted butter
1/4 cup freshly grated Parmigiano Reggiano cheese
