We made a simple and delicious pineapple glaze to top the thinly sliced meat. We brined the pork for about 2 hours before drying. Then we grilled the roast until the internal temperature reached 140 degrees F. Then we rested the meat for 20 minutes while we made the couscous and the pineapple glaze.
