If you have a fresh pineapple around one way to use it is to make a homemade sauce/glaze for pork or chicken breasts. We made our own pineapple slices and mashed some of the remainder to make a glaze.pineapple

Start by grilling four pork tenderloin steaks and let them rest for about 10 minutes. They are small so they do not need to rest too long.

Grill the pineapple slices the same way and place them along side the pork on a plate.

To make the sauce/glaze place some of the crushed pineapple, sugar, and soy sauce in a small sauce pan and cook for a few minutes to break down the pineapple. Strain the sauce/glaze to remove the pulp and drizzle over the pork steak and pineapple slice.

Top with some kosher salt and serve.

This dish would go very well with some couscous or white rice.
