This is a very rich Pasta Carbonara recipe with 5 egg yolks. The recipe calls for Parmigiano-Reggiano cheese, however you could most likely substitute it with a more reasonably priced Parmesan cheese or other hard-rind cheese such as Pecorino Romano.
