Oven roasted fingerling potatoes are similar to roasting quartered potatoes on a baking sheet. These potatoes are long and thin and generally very small. Even if some are larger than others, roasting them on a lower temperature with some seasoning mix and oil will allow them to cook evenly. Ingredients - 2 pounds fingerling potatoes
- 2 tsp salt
- 1 tsp cayanne pepper
- 2 tsp lemon pepper
- 1 tablespoon rosemary
- 1/4 cup olive oil
Method In a work bowl coat the potatoes with all the seasonings and olive oil. On a half sheet pan with parchment paper or a silpat spread out the potatoes evenly. Set your oven in 350 degrees f for around 30-40 minutes and serve.
