These flavorful shrimp are great to make for shrimp cocktail, salads or shrimp salad. By utilizing the shells for a stock, you ensure a wonderful taste that's helped along with white wine and spices.

Ingredients:

  • 1 pound large, raw shrimp, peeled, deveined, and rinsed (shells reserved)
  • 3 cups water
  • 1 cup white wine
  • 1 teaspoon salt
  • 3 peppercorns
  • 5 coriander seeds
  • ½ bay leaf
  • A couple of sprigs fresh parsley
  • 1 sprig fresh tarragon
  • 1 teaspoon freshly squeezed lemon juice

Method:

Combine the reserved shells with the water in a large pot and bring to a boil. Lower the heat and let simmer for about 20 minutes until fragrant. Strain all the shells.

Add the wine, salt, peppercorns, coriander seeds, bay leaf, parsley, tarragon and lemon juice to the strained stock. Bring up to a boil and let boil for about 3 minutes so all the flavors combine. Remove from the heat, add the shrimp, cover and let sit for about 8-10 minutes until firm and pink. At that point, place the shrimp in ice water to stop the cooking process, drain.
