| | Eggplant - one medium to large eggplant is about 548 grams and has 132 calories The eggplant, also called aubergine is a member of the nightshade family of vegetables which also includes potatoes, sweet peppers, and tomatoes. The eggplant is actually technically a fruit and not a vegetable. They grow in a similar manner as tomatoes, hanging from the vine of a plant that grows 16 to 57 inches tall.
Eggplants are dark purple in color and they have a light interior. Their taste is slightly bitter and they are capable of absorbing large amounts of cooking fats and sauces. When cooking eggplants, it is a good idea to salt cut slices before cooking and rinsing the slices. This method will remove much of their bitter taste as well as reduce the amount of oil absorbed.
Nutrient wise, eggplants contain some dietary fiber, potassium and manganese, however they are not very rich in vitamins. Roasting, grilling, sautéing are the preferred methods for cooking eggplants. Common dishes that includes this vegetable are eggplant parmigiana, baba ganoush, salads and stews. A serving size is about 1/2 cup cubed and cooked.
