Creating a great crust on salmon is easy if you take your time and have the right equipment. We really like to use cast iron for this job. Nothing gets as hot or retains the heat when you place down a few cold fillets. Method Heat a 10 or 12 inch heavy Cast Iron Pan for a good 5 minutes on medium-high heat. While the pan is heating up prepare your salmon fillets by making sure they are very dry, lightly coat the fillets with vegetable oil and season with salt and pepper. Lay down the fillets in the pan, skin side up, so that there is plenty of room, do a second batch if necessary. Turn down the pan to medium and sear for about 3 minutes on each side. There will be plenty of smoke so turn your oven hood on.
