| | The beet is a flowering root vegetable with relatively high sugar content. Most commonly the beet is dark red, but you can also find other varieties such as white, yellow or striped. The tubers are round and their leaves are edible as well.
Beets contain a significant amount of vitamin C and are also high in folate, soluble and insoluble dietary fibre and antioxidants. The leaves contain high levels of vitamin A.
Beets can be cooked in a variety of ways – boiled, steamed, microwaved, or roasted. They go especially well with a contrasting cheese, such as feta or chevre. Beets are excellent in salads and soups. Serving size is about 1/2 cup cooked or the size of a small apple.
