Balsamic Onions and Brussel Sprouts

This is a really nice Brussels sprout dish with sweet red onions, balsamic vinegar and abrussel_sprouts touch of orange zest. The sweetness in the onions and the balsamic balance out any bitterness in the Brussels sprouts and the orange zest provides an interesting addition. If you want to add a little extra sweetness, then some honey would go nicely. We slice the Brussels sprouts and sauté them along with the onions, that way they don’t take as long to cook and the dish comes together nicely.

Ingredients:

  • 1 tablespoon butter
  • 1 tablespoon oil
  • 1 red onion, sliced
  • 2 cups Brussels sprouts, sliced
  • 2 tablespoons dry Vermouth
  • 3 tablespoons balsamic vinegar
  • Salt and pepper
  • Zest from half an orange (can be substituted by lemon)

Method:

Sauté the onion and the Brussels sprouts in the butter and the oil. After about 10 minutes, add the vermouth, the balsamic vinegar and salt and pepper. Cook on medium – low heat until the Brussels sprouts are done, add the zest. Taste and possibly add some more balsamic vinegar and salt and pepper.
